THE LITTLE DETAILS

A little kitchen wisdom.

Small things to notice while making our tomato and basil spaghetti.

Smooth tomato sauce with basil in a pan
01 / GIVE IT TIME

The video is short.
The simmer isn’t.

Our sauce gets about an hour on low heat. Small, gentle bubbles are the cue; a vigorous boil is not the goal. Stir occasionally, and keep the lid on between checks.

The written recipe keeps those real cooking times in view, even when a video moves quickly.

Pale garlic, gentle heat.

Warm the halved clove in the measured oil over medium-low heat for about two minutes. Lower the heat if it starts coloring. The garlic is removed before sieving.

03 /

Two salts, two jobs.

The sauce salt and pasta-water salt are listed separately. Start with the sauce quantity in the recipe, taste, and adjust only if needed.

04 /

The packet is a guide.

Pasta shapes and brands have different timings. Read your package, taste a strand near the end, and leave a little bite before the final toss in sauce.
